Ingredients
- Creamy Grits
- 2 cups vegetable or chicken stock
- 2 cups skim milk
- 1 bay leaf
- 1 cup stone ground grits
- Salt
- Freshly cracked black pepper
- 2 tbsp butter (optional)
- 2 oz shredded cheddar cheese (optional)
- Honey Butter Cajun Chicken
- 12 oz Just Bare Lightly Breaded Chicken Strips
- 1 tbsp olive oil
- ½ cup green and red bell pepper, minced
- ½ small onion, minced
- 3 cloves of garlic, minced
- 4 tbsp butter, diced into large cubes
- ¼ cup honey
- 1 tbsp cajun seasoning
- 1 tsp franks hot sauce
- ¼ cup parsley, minced
- ¼ cup green onion, minced
- Lemon juice
- Salt
- Freshly cracked black pepper

Instructions
- Prepare the creamy grits by bringing the stock, milk and bay leaf to a simmer over medium heat.
- Slowly add stone ground grits and whisk vigorously to avoid lumps.
- Continue to cook grits over medium heat, stirring frequently until grits absorb all of the liquid and thicken, about 40-45 minutes.
- Remove grits from heat, season to taste with salt and pepper and add optional butter and/or cheese – Serve with cajun-style chicken.
- Preheat the air fryer to 350°F – place frozen chicken pieces in the basket in a single layer and cook for 8 minutes. Heat through until internal temperature reads 165ºF. Once done, dice strips into bite-sized pieces and reserve (chicken can also remain in whole strips if desired).
- While chicken is cooking, heat olive oil over medium heat in a saute pan.
- Add minced peppers and onion and cook until softened, about 5 minutes.
- Add garlic and cook for an additional 1-2 minutes.
- Add butter cubes, honey, cajun seasoning and Frank’s Hot Sauce. Stir to combine and allow to simmer for 2-3 minutes.
- Remove from heat, finish with parsley and lemon juice if desired – season to taste with salt and pepper.
- Add diced chicken into the cajun honey butter mixture and toss to combine.
- To serve, spoon chicken over grits and garnish with fresh parsley and green onion if desired – enjoy!
