- 1 cup BBQ sauce
- 1/2 cup gochujang (Korean chili paste)
- 1/4 cup soy sauce
- 2 tablespoons rice wine vinegar
- 2 tablespoons sesame oil
- 1 tablespoon fresh ginger, chopped
- 1 tablespoon fresh garlic, chopped
- Bamboo skewers, soaked in water for 30 minutes
- Bok Choy Slaw:
- 4 cups thinly sliced bok choy
- 1/4 cup shredded carrots
- 2 tablespoons chopped cilantro
- 2 tablespoons chopped green onions
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon honey

Instructions
Marinate the Chicken Thighs

- Cut the thighs to your desired size for the skewers. Place the chicken thighs in a shallow dish or resealable plastic bag. Pour the marinade over the chicken, making sure each piece is well coated. Marinate in the refrigerator for at least 1 hour, or overnight for best flavor.
Prepare the Bok Choy Slaw
- In a large bowl, combine thinly sliced bok choy, shredded carrots, chopped cilantro, and chopped green onions.
- In a small bowl, whisk together rice vinegar, sesame oil, honey, salt, and pepper.
