  • 3 to 4 (2 pounds) Just Bare Chicken Thighs
  • 2 plum tomatoes, each cut into 6 slices
  • 1 pint grape tomatoes
  • 2 green bell peppers seeded and cut into large dice
  • 1 cup baby spinach leaves, stemmed and coarsely chopped
  • 1/2 cup crumbled persian feta cheese, divided into two
  • 4 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon pepper flakes

Instructions

  1. Preheat oven to 375°F. Lightly coat 13” x 9” pan with cooking spray.
  2. Combine spinach, feta, and garlic in a small bowl.
  3. Loosen skin from chicken thighs and carefully insert tomato slices.
  4. Insert stuffing over tomatoes under chicken skin.
  5. Place chicken in a single layer in prepared pan. 
  6. Mix grape tomatoes and bell pepper together and fill in the spaces around the chicken with the mix.
  7. Sprinkle with salt, pepper, and pepper flakes.
  8. Bake for about 35 minutes or until chicken is no longer pink in center (165°F internal temperature).
