

Bang Bang Chicken with Cauliflower Fried Rice

Ingredients

- Cauliflower Rice
- 1 ½ lbs frozen riced cauliflower
- 3 Tbsp oil
- 2 large eggs, whisked
- ½ cup red bell pepper, small dice
- ½ cup onion, small dice
- 1 tbsp minced garlic
- ¼ cup soy sauce
- 1 tbsp rice vinegar
- 2 tsp sesame oil
- 1 tsp kosher
- ¼ cup green onions chopped
- Bang Bang Sauce
- ½ cup mayonnaise
- 2 tbsp sweet Thai chili sauce
- 2 tbsp Sriracha sauce
- 1 tsp rice vinegar
Instructions
Chicken Preparation:
- Preheat Air Fryer to 360 degrees
- Cook Just Bare® Lightly Breaded Chicken Breasts for 19 minutes or until crispy and hot
- Slice chicken breasts and hold hot

Other Preparation:
- Preheat a large non-stick skillet over medium heat. Add one tablespoon of oil along with the whisked eggs. Cook over medium heat for 2 minutes, stirring occasionally, until scrambled. Remove the eggs from the pan and wipe it clean with a paper towel.
- Add another tablespoon of oil along with the diced onion and peppers. Sauté for 3-4 minutes, or until tender. Mix in the minced garlic and continue sauteing for an additional 30 seconds.
- Add the cauliflower rice, soy sauce, vinegar, sesame oil, and salt. Cook over medium-high heat for 6-8 minutes, stirring occasionally.
- Mix in the scallions and scrambled eggs during the last 2 minutes of cooking.
- Place cauliflower rice in the middle of plate, top with sliced crispy chicken breasts and drizzle with Bang Bang Sauce
