Ingredients
- Chipotle Lime Chicken
- 4 Just Bare Boneless Skinless Chicken Breast Fillets
- 1 lime, juiced
- 1 tbsp chipotle pepper powder or chili powder
- 1 tsp ground cumin
- 1 tsp kosher salt
- 1 tbsp olive oil
- Freshly cracked black pepper
- Mango and Red Cabbage Slaw
- 2 mangos, peeled and thinly sliced
- ½ small red cabbage, shredded, or 1 bag of coleslaw mix
- 1 poblano pepper, cored and thinly sliced
- ½ cup cilantro, minced
- 1 lime, juiced
- 1 tbsp honey
- 1 tbsp olive oil
- Kosher salt
- Freshly cracked black pepper
- Guacamole Topping
- 2 ripe avocados, cored and diced
- ½ pint of cherry tomatoes, halved
- ¼ cup cilantro, chopped
- ¼ red onion, minced
- 2 garlic cloves, minced
- ½ lime, juiced
- Kosher salt
- Freshly cracked black pepper

Instructions
- Prepare chicken by combining ingredients and allowing it to marinate for at least 30 minutes.
- While the chicken is marinating, combine sliced mango, shredded cabbage, sliced poblano, and minced cilantro in a bowl.
- Dress mango slaw with the juice of one lime, honey, and olive oil – season to taste with salt and black pepper. Allow flavors to marry in the fridge for at least 15 minutes.
- Prepare the guacamole by adding diced avocado, cherry tomatoes, red onion, and garlic in a small bowl. Add the juice of half a lime and season to taste with salt and black pepper – reserve. If desired, smash avocado to create a smoother texture.
- Preheat a grill pan on medium-high heat.
- Cook chicken breasts on both sides for 7-9 minutes, the chicken should reach a minimum internal temperature of 165°F. Remove and allow to rest, slice on a bias if desired.
- To serve, plate 1 grilled chicken breast followed by a side of mango slaw. Top chicken with guacamole and enjoy!
