Ingredients

  • 3 pounds Just Bare Chicken Wingettes & Drumettes
  • Chicken Marinade:
    • 4 small dried Persian limes
    • 2 tsp garlic powder
    • 3 limes
    • 2 tsp freshly ground black pepper
    • 1 tsp ground coriander
    • 1 tsp ground cumin
    • 2 tsp Aleppo pepper
    • 1/2 tsp baking soda (optional)
    • 3 tbsp canola oil
    • 1 lemon
    • 2 garlic cloves, finely chopped
    • 3 tbsp pomegranate molasses
    • 1 tbsp honey or maple syrup
    • 1 tsp Aleppo or cayenne or Kashmiri chili powder (to taste)
    • Sesame seeds, for serving

Instructions

  1. Preheat grill to 390 degrees.
  2. Blend the limes, garlic, black pepper, coriander, cumin, Aleppo pepper, baking soda (if desired), salt and oil. Coat wings in the mixture.
  3. Grill for approx. 25 minutes, rotating a couple of times during the cook, or until internal temperature reaches 185 degrees, ensuring chicken is tender and any redness near the bone is cooked away.
  4. While wings cook, squeeze 2 tbsp of lemon juice (about half of one lemon) into a small bowl and set aside.
  5. Cut the remaining lemon into wedges and set aside for serving.
  6. In a small saucepan, heat the remaining 1 tbsp of oil over medium. Add the garlic and cook until the garlic begins to sizzle, about 30 seconds. Whisk in the lemon juice, molasses, remaining black pepper, 1/2 tsp salt, and chili.
  7. Bring to a simmer and cook for 3 to 4 minutes to slightly reduce and thicken. Set the glaze aside.
  8. Toss the cooked wings in glaze, sprinkle with sesame seeds, and serve!
