Ingredients
- 1 3-4 lb Just Bare Pork Loin, cut into 2” randomly shaped chunks
- 1.5 liters vegetable oil (for frying)
- 2 cups whole milk
- 3 tbsp smoked paprika, divided
- 2 tbsp cumin, ground, divided
- 2 tbsp chipotle powder
- 2 tsp kosher salt
- 2 tsp freshly ground black pepper
- 4 cups all-purpose flour
- 8 Belgian waffles
- 8 tbsp butter
- 1 cup maple syrup

Instructions
- Add oil to fryer or deep cast iron skillet leaving oil at least 1.5” from the top to ensure it does not spill over. Heat to 375°F.
- In a large bowl, combine milk with 1 tablespoon paprika and 1 tablespoon cumin. Place the pork chunks into the seasoned milk and let sit for 10 minutes.
- In another large bowl, combine flour, 2 tablespoons paprika, 1 tablespoon cumin, chipotle powder, salt, and pepper. Dredge pork chunks in seasoned flour mix, shake off excess flour, and place on a plate or baking pan until ready to fry.
- Working in batches, add 3 to 4 pieces of pork to the oil and fry for 4 to 5 minutes or until golden brown and cooked to an internal temperature of 145°F.
- Heat waffles as directed. Top warm waffles with butter, 2 pieces of fried pork, maple syrup, and a pinch of smoked paprika.
